Appellation: California. 90% Mendocino County / 10% Clarksburg
Winemakers Notes: The chardonnay grapes are gently pressed. The juice is settled in stainless steal tanks and then fermented. A long cool fermentation captures and enhances the pure and layered fruit flavors. Individual lots were fermented separately. Six months on new oak provides a smooth, lush mouthfeel and delicious toasty flavors. Full secondary fermentation provides a delicate buttery finish, perfect to welcome springtime.

Ingredients
- 2 tablespoons vegetable oil
- 2 tablespoons sesame oil
- 2 lbs. boneless skinless chicken breasts, cut into 1-inch pieces
- 2 crowns of broccoli, cut into bite size florets
- 1-pint shitake mushrooms
- 3 carrots peeled and thinly sliced on the diagonal
- 1 red bell pepper, cut into 2-inch strips
- 1 medium onion, diced, (approximately 1 cup)
- 1 cup cashew pieces
- ¾ cup Neptune Biryani Style Paste
- 6 tablespoons Greek yogurt
- 6 tablespoons cream of coconut
Preparation
1.Heat vegetable oil and sesame oil in a large skillet over medium high heat; add chicken and cook for about 8 minutes or until lightly browned.
2.Add the vegetables and sauté another 8 minutes, or until tender crisp; add cashews and toss to blend.
3.In a small bowl, combine the Biryani Style Paste, yogurt and cream of coconut and mix well. Add sauce to chicken/vegetable mixture.
4.Reduce heat to low and cook for 5 minutes, or until warm.
5.Serve immediately over basmati rice, if desired.

For this easy-to-prepare salmon recipe, pan sear the outsides of salmon fillets until lightly caramelized on a hot baking sheet, and then oven-roast at a lower temperature until deliciously moist and tender inside. Serve topped with a delightfully tangy-sweet grapefruit salsa for an impressive entrée.
Ingredients
- 2 tablespoons Pink Grapefruit Marmalade
- 2 tablespoons green onions, chopped
- 2 tablespoons red and orange bell pepper, fresh, diced
- 1 tablespoon green jalapenos, seeded, minced
- 1 teaspoon flat leaf parsley, minced
- 1/2 cup red grapefruit, refrigerated, drained, 1/4 -inch dice
- 1 center cut skin-on salmon fillet (about 2 pounds)
- Olive oil
- Kosher salt
- Black pepper, coarse ground
Preparation
1.Preheat oven to 475°F.
2.Combine pink grapefruit marmalade, green onions, bell pepper, jalapeno and flat leaf parsley in a small bowl and stir until fully blended.
3.Add diced grapefruit and gently stir to blend. Keep cold.
4.While preparing salmon, preheat a baking sheet in hot oven.
5.Using a sharp knife, cut fillet into 4 equal pieces; pat dry with paper towels to remove excess moisture. Rub fillets lightly on all sides with olive oil and season with kosher salt and black pepper.
6.Remove preheated baking sheet from oven; carefully arrange fillets, skin side down, on baking sheet and return to oven.
7.Immediately reduce oven temperature to 275°F.
8.Oven roast salmon for 10 to 12 minutes or until the fish is cooked to desired doneness.
9.To serve, top each fillet with grapefruit salsa.
